At Chocolaterie Stam we use organic milk from purchased from small local Iowa farmers whose cows are grass fed. We believe this base is the difference in our gelato — happy, naturally fed Iowa cows produce our milk!
Gelato is referred to as “italian ice-cream”, but here’s the difference: it has 30% less butterfat than ice cream and less air — only 10% whereas ice cream ranges from 20 to 50% air! Gelato is slow-churned and exhibits a soft, creamy texture. It is typically served 10-15 degrees warmer and softened with a spade instead of a scoop. The results are a more intense flavor.
Chocolaterie Stam offers delicious gelato for its customers. The gelato is made in-house with twelve to fourteen flavors regularly displayed in the case. Unique and popular flavors are the Pink Grapefruit sorbetto and the Dark Chocolate sorbetto. The non-dairy sorbettos are a nice option for customers who can’t have milk.
